Thai Beef Satay Skewers

Ingredients:
½ pound beef
2 tablespoon Hoisin Sauce
2 tbsp Dark Soy Sauce
2 tbsp Honey
1 large capcicum
Lettuce
2 tomatoes
½ English cucumber

Steps:

Cut the beef into bite size ½ inch cubes and place in a mixing bowl.

Prepare the marinade by mixing hoisin sauce, soy sauce and honey, taste this to make sure it has the right balance of sweetness and sourness.

Add ¾ of the marinade to thebeef, make sure the marinade is in contact with all pieces of the beef by using your hands or tongs. Marinate for 30 minutes to overnight in the fridge.

Wash hands, on a clean surface prepare the salad by slicing the cucumber, lettuce and tomatoes, place them in one bowl. Slice the cupcicum too but place this separate or on the slicing board, preferably ½ inch too as these will go in the skewers

Once the beef has marinated, use the skewers, I would have placed the skewers in cold water earlier to prevent them from burning in the oven, use the sharp edge to pierce the beef, repeat the same with capcicum, a piece at a time. Repeat until the bowl is empty.

We will brown the beef satays on a skillet before finishing them up in the oven. On a high heated oven add a tablespoon of canola oil or any other cooking oil and place the beef skewers on top of the skillet turning as needed for 5 minutes.

Transfer the skewers in a baking sheet, use the leftover marinade and brush it through the beef skewers. Bake for 20 minutes in a 350 degrees heated oven.

Use your favorite dressing on salad and serve the beef satay skewers over the salad.
