Is Summer Squash The Same As Zucchini

Technically they are in the fruit family, though they are most often treated as a vegetable. Summer squash can be green (know as zucchini, or courgette throughout Europe), yellow (usually called summer squash or yellow zucchini). They can be roasted, baked, fried, steamed or eaten raw.

Zucchini skin is soft, thin, and perfectly edible, so don’t peel it off. Simply wash the vegetable in running water and cut off both ends. Place the cut ends into compost and cook the middle part.

Begin by placing the zucchinis on a chopping board. Using a sharp knife dice them into desired shape. I did an oval shape today, but feel free to explore other shapes.

 Zucchini, healthier raw or cooked option

Raw zucchini offers a similar nutrition profile as cooked zucchini, but with less vitamin A and more vitamin C, a nutrient which tends to be reduced by cooking. Zucchini contains a variety of vitamins, minerals, and beneficial plant compounds. Today’s ingredients for roasted zucchini and summer squash are:

2 yellow summer squash
2 zucchinis (green)
1 tbsp herb and garlic seasoning
1 tbsp cooking oil
2 tbsp mozzarella or parmesan cheese.

Once you cut the zucchinis in oval shape, sprinkle the garlic and herbal seasoning evenly. Toss the zucchinis or use your hands to rub the seasoning in. Add in the oil make sure each zucchini has come into contact with the oil. Spread the vegetables on a baking sheet, ensure that they are not overlapping. This is my secret tip that helps the zucchinis from getting soggy.

Last but not least, preheat the oven at 410 degrees Fahrenheit and bake for 15 to 20 minutes. You may be wondering how to tell when the zucchinis and squash are cooked. Basically, I use my eyes and commonsense to see that they are cooked. They should look dry and not soggy as in image below. Carefully remove the baking sheet from oven and sprinkle the cheese evenly.

Finally, place the baking sheet back to the oven and leave the cheese to melt, even better turn a little brown. This makes a perfect healthy side dish.
