Mushroom, a nutrient-dense versatile food can share some of the benefits of fruits and vegetable and complement almost any everyday meal. When you eat a vegan mushroom bean burger you get good quality protein because they produce large quantities in a short time and provide more protein per unit area than other crops. Mushrooms and beans are low in calories, carbohydrates, calcium and sodium. They contain high proportion of unsaturated fat but virtually no harmful lipid or cholesterol. This vegan burger mushroom bean recipe serves 4, you will need:
1 pound mushrooms chopped into small pieces
1 can of pinto beans rinsed and dried
2 cloves of minced garlic
2 tablespoon cooking oil
1 medium sized chopped onion
Bread crumbs
Baby spinanch
Tomatoes diced into oval shape
Home made tomato sauce (optional)

Steps making the vegetarian patties

Hey friends, this is not the usual Mc donalds or burger king burger out there. This is vegan and so easy to cook at home, just make sure you have a little more time. I took 30 minutes for this recipe. The mushroom bean patties can be cooked by frying or baking but I broiled mine on high for 5 to 7 minutes. Cooking time with therefore vary depending on how you opt to cook the patties.

To begin with, ensure you pan is on medium high heat, add the the cooking oil and saute the garlic and onion until they are soft and tender.

Add the mushrooms, all the spices and salt to taste. Cook the mushrooms for 6 minutes or until they are soft and tender and all the water is drained.

Meanwhile rinse the beans in cold running water and mash them, you could you a food processor too but I chose to do it manually. This helps me control the texture and consistency of the end product. A rough paste is easier to work with. Add in the cooked mushrooms and parsley and mix and the bread crumbs as the binding agent. Mix and add the bread crumbs as needed.

Last but not least, use your hands to form the patties. This might look messy but believe me the vegan mushroom burgers will be so yummy.

Finally assemble the burger. Toast the burger bread, you can use butter on it but I like mine without. I used baby spinach and tomatoes, but you could also use lettuse. Add in other other fillers as you may wish. Bon appetite.
