Ingredients include:

2 tbsp cooking oil
1 tbsp salt
1/2 tbsp black pepper

Tomato Sauce Fresh Tomatoes

Some tomato sauce recipe out there are made out of canned tomatoes but I prefer to make my sauce from fresh tomatoes. I use beefsteak red tomatoes but any ripe tomato would do, the preparation and cooking method may vary.Begin by cleaning the tomatoes in running water and remove the stem. For best results, the skin needs to come off.

Method 1
First method involves boiling water in a pot enough to cover the tomatoes. Cook for 5 minutes, turn the heat off transfer the tomatoes in ice water to avoid getting soggy. Once they cool down it will be easy to get the skin off.

Method 2
Second method, place the tomatoes on a baking sheet, bake them in oven for 10 minutes at 450º fahrenheit, remember to keep an eye on them as you do not want the tomatoes to brown. Get the tomatoes from oven and allow them to cool down before using your hands to peal the skin off.

Finally, use a knife to remove the center of the tomato it does not cook evenly. Finely chop the tomatoes and keep them ready to cook.

Bringing the tomato sauce ingredients together

Use a food processor or blender to form a rough paste of the onion celery and garlic. Meanwhile, on a medium heated pot add in the cooking oil. Empty the rough paste into the pot and cook as you stir evenly until the aromatics are soft. Add in the tomatoes and stir as often as possible for 10 minutes, adding in the wine half way through salt and black pepper to taste. Throw in the parsley and mix well.

If you still want to reduce the amount of water in the tomato sauce, remove the lid and simmer it for a few more minutes. Serve the sauce with pasta recipes, zoodles, my classic mushroom bean burger or even on pizza base.
