How to make 3 Ingredient Vegan Pancakes
Who said you cant eat pancakes for dinner? Well, this is how I made 3 ingredient vegan pancake for dinner the other day. It’s an easy healthy, vegetarian, egg free pancake recipe that can be served for breakfast lunch or dinner. I used Korean pancake mix that you can buy here
Ingredients are:
A bunch of scallions sliced into medium sized strips
1.5 cups of water
1 cup pancake mix
These quantities make three, 3 ingredient vegan pancakes.
Pancake sauce
Everyone in my household eats pancakes with pancake sauce. All I need to prepare one is:-
2 teaspoon soy sauce
2 tablespoon vinegar
2 table spoons brown sugar
2 cloves medium sized chopped garlic
Some black pepper
Steps: Homemade vegan pancakes
Begin by cutting the scallions into thin strips. Make use of the green part as much as possible for color. Go and extra mile and dip them in cold water to make them curly. This is totally optional but I enjoy the process.
In a mixing bow ad flour and gradually add the water, whisk as you go. If you do not have Korean pancake mix, you can always use all purpose flour add 1/4 teaspoon baking powder and salt to taste. The ratio of water to flour in this recipe is accurate. However, if you are doing this in a rush, you can eyeball by adding water as you go. Remember you can always add more water but you can not remove. When the butter is smooth and no visible crumbs add in the scallions and fold them in the batter.
Lastly, heat a pan on medium high heat and add oil, pour in some of the pancake batter mix and spread. I like thin pancakes, you can add as much batter as you want depending on how thin or thick you want the pancakes. Cook on one side for 3 to 4 minutes then flip and cook the other side. Repeat process until all the pancake batter mix is over.
Allow the pancake to cool down. Meanwhile prepare the pancake sauce. Add all the ingredients in a mixing bowl and whisk until the sugar is fully dissolved.
Serve the 3 ingredient vegan pancakes with the pancake mix. Enjoy.
