How To Cook Lemon Grass Chicken
Lemon grass is a culinary herb with a lemony aroma. Its mostly cultivated in South East Asia, Srilanka, Indonesia and India. Its commonly used in Asian cooking because of its lemony and citrus flavors.Today I will showing you how to cook lemon grass chicken from scratch. I love this version and I would not be showing you if I did not like it. To add some crunchiness I served the lemon grass chicken with some sliced English cucumber. Some people remove the seeds from the cucumber but hey… I eat what I like with my lemon grass chicken.
Ingredients:
Chopped lemongrass 2 tbsp
3 cloves of garlic
Red dry peppers as needed
½ pound chicken thighs
Marinade
1 tbsp lemon grass
1 tbsp cornstarch
2 tbsp dark soy sauce
1 tbsp light soy sauce
Stir fry sauce
2 tbsp Fish Sauce
2 tbsp brown sugar
¼ cup chicken stock
Steps: Costco Lemon Grass Chicken
In a mixing bowl add diced chicken in bite size pieces, add corn starch, dark soy sauce and light soy sauce. Mix and marinade for half an hour. You can marinate this overnight in the fridge too.
In a frying pan or wok, add 2 tablespoon of oil and saute ginger and 1 tbsp lemon grass. Just when they soften add the chicken and spread it in the wok, leave it on wok for a while until the chicken pieces start turning brown, add in the stir fry sauce at this point you can add in the dry red peppers, cook until the chicken is well coated. Add in 2 cups chicken stock or water or coconut water cover and cook until well cooked and the liquid has evaporated.
Serve over rice or noodles or with any carbohydrate of your choice
