How To Cook Chinese Pepper Steak
By now you all know I like home made food, its cheap and healthy to make, you can have a variety too regardless of what part of the world you live. So today I will be outlining simple steps on how to cook chinese pepper steak. But first let us list the basic ingredients that you need to cook the chinese pepper steak.
2 pound ribeye beef
1 tbsp fish sauce
2 tbsp dark soy sauce
2 tbsp soy sauce
1 tbsp baking soda
2 tbsp honey
2 tbsp oyster sauce
1/2 cup beef stock
1 medium sized onion
3 cloves of garlic finely chopped
1 tbsp cooking oil
1 red pepper
1 green pepper
2 tbsp corn starch
Steps to cook the chinese pepper steak
Pepper steak is one of the dishes that my grandma used to cook on a weekly basis. My grandma pepper steak recipe was an easy mixture of beef onion and pepper. She added water for sauce, she claimed that pepper steak with marinade or worcestershire sauce would reduce her lifespan. [funny grandma]

To begin with, cut the meat into bite size pieces, I use ribeye but any other kind of meat would be ok. If its a cheap cut, slice it against the grain. You could also use a meat mallet to tenderize the meat. Allowing the meat to come to room temperature is also helpful and makes your meat more tender. A little secret I learnt from my grandma recipes is to add baking soda to the beef, this is what I did here. Once the meat was all sliced up, I placed it in a bowl and added 1 tablespoon of baking soda and set it aside for about 30 minutes. You can do this overnight.
Next, wash hands and cut all the vegetables. I cut green and red peppers and a sweet onion and set aside. Feel free to throw in different colors of peppers to suit your taste. I used red and green as I felt this would give my recipe a [great kick]. For the aromatics I used garlic, yes, food with no garlic is almost unacceptable in my house.
Additionally, I wanted to make sure I have all the preparation done before cooking, for the sauce, I opted my own homemade as opposed to buying an already done marinade from the store, in a mixing bowl I added 1/2 cup of beef stock, 2 table spoons honey, 2 tablespoons dark and regular soy sauce, 1 tablespoon fish sauce and 2 tablespoons of corn starch. This is pepper steak the chinese way. Feel free to substitute any of these ingredients with what is locally available in your stores.
Last but not least, cook my pepper steak on a stove.I heated the skillet and added 1 tablespoon of cooking oil, and spread the beef in the skillet. If the first piece does not give you a sizzle know that the skillet is not hot enough.Spread the beef on the skillet and resist the urge to flip it over before its brown. give it 3-5 minutes, flip and cook the other side. Do this in batches until you are done.
Finally, do not clean the skillet, all those brown left overs on skillet are full of flavor. No need to add more oil on skillet if the skillet is still oily, saute the garlic for a minute then add all the other veges. I like them cooked but crunchy at the same time, so I keep an eye on this. 4 minutes is good enough then add back the beef. Stir up the sauce one more time and add it in the skillet, mix and allow the sauce to thicken.
Serve over rice or your favorite source of carbohydrate.
