3 lobster tail
2 tablespoons cooking oil
3 tablespoons melted butter to serve
chopped parsley to garnish
lemon wedges
1/2 tablespoon black pepper
1/2 tablespoon cayenne pepper
1/2 cup water and vinegar mixed into equal parts

How to butterfly lobster tails for baking
Begin by washing the lobster tails in cold running water and place them on a baking sheet. Using scissors cut the back of the lobster towards the tail in a straight line. Do not cut all the way as you will need the meat to hold on to the shell. At this point, get your hands to do some work of getting the meat out of shell or a spoon can work too.
Next step is to add in vinegar and water. This can be substituted with wine and its meant to keep the lobster tails moist as they are cooking in the oven.
